Mild cheese made from 100%  goat’s milk. Sweet grass & nutty flavour notes. Aromatic, creamy, & runny when ripe.

Saint Paulin, Quebec Mild dessert cheese originally made by trappist monks.  Creamy & butter-like, yet firm enough for slicing.  Edible orange rind.

Bleu Bénédictin, Quebec Made with whole milk & aged 3 months. Robust flavour with creamy texture. Semi-soft, blue veined, & pasteurized.

Bleu Ermite, Quebec Classic blue cheese with zesty flavour.  Semi soft, thin, whitish rind. Ivory interior with blue green veins.

Le Douanier, Quebec Like a French Morbier, medium strong hazelnut flavour, semi soft.

Empereur, Quebec Mild cheese made from 13% milk fat.  Slight nutty flavour with hints of sweet grass.
